Someone said gain weight? Yeap, I’m affraid so. I realized after going through a list of meals that I enjoy to eat to comply with this week’s listicle, my gastric juices were rumbling like my neighbour’s motorcycle.
Stasha’s dear husband, from The Good Life is inquiring about FOOD. So, I’ll do what I do best which is showcase some of the food I am most proud of – Mexican food. And please forgive me if your appetite wakes up and go for a second round of whatever-you-just-ate thing. I’ll blame it on Stasha’s husband.
2. Beans. Whatever their form, refried, whole, black, kidney, pinto I make them fresh as much as I can. Also, to ensure those sugars and starches are removed properly, nobody likes to be gassy, right?
3. Mexican rice. No Mexican dish can be eaten without this delicious carb.
4. Picadillo. Ground beef couldn’t be more delicious than this. This recipe is so easy to reproduce, that I almost don’t miss home.
Okay, I’ll reveal a secret, no Mexican family makes their mole from scratch. We use a little jar with an already-made paste that only needs to be dissolved with chicken stock. The results are pretty fantastic.
8. Tomate. I think tomatoes are the sexiest fruit. Just look at them, curvy, juicy and delicious. And I think that is why tomatoes are one of the base ingredients in our culinary dishes: soups, rice, meat dishes, salsas.
9. Elote (Corn). Oh my God. Corn is just part of our heritage. Corn is Mexico. And I must eat it when I visit back home.
Corn can be an ingredient, a main meal or a snack. Its preparation doesn’t have limits and you can always add anything from your fridge on it. My favourite is to rub mayonnaise, sour cream, ricotta, some chili powder and perhaps a little bit of lime. Yummy.
10. Salsa. This is what glue meals together, it makes my dishes taste better. I haven’t tried making it myself since I have found a good selection of salsas at our local store. But one day I’ll adventure to can some.
